Menu Plan Monday


Getting back into the swing of things, after a horrible week of eating out, thank goodness we are getting back to normal and making dinners again. I mean don't get me wrong, eating out is pretty fantastic because it's no work at all, but after doing it a couple days in a row, it loses it's spark. We were eating out alot because I was recovering from bed rest and while I was actually on bed rest my parents were here cooking meals everyday. But when I started to get back to doing stuff on my own, my husband didn't want me to cook..so his solution, let's go out. hahah. Love him for trying.

So let's see, we're gonna go with a few favorites this week. My husband is kinda picky so I have to spring things on him by surprise otherwise he'll protest it. Which is al ot harder now, because he wants to be apart of the meal planning now. Can't say I don't enjoy that, but I see him wanting to pick the same things over and over. Is that a guy thing?

Monday : Taco Soup 
Tuesday : Rotisserie Chicken with mashed potatoes and veggies
Wednesday: Apricot Glazed Chicken Drumsticks with salad
Thursday : Coconut Ginger Chicken with quinoa
Friday : Creamy Corn and Shrimp Chowder with corn bread
Saturday : Tuna and Fig Wraps (Recipe below)
Sunday : My son's 5th birthday, dinner out!!

I found this recipe in my All For You magazine awhile back and it sounded amazing, so I'm gonna try it and see how it goes.

Tuna and Figs Wrap
Prep:
15min
Serves: 6
Ingredients:1 5.3 oz container 2% Greek yogurt, honey flavored
1 tsp lemon zest
Pepper
1 12oz can solid white tuna in water, drained
2/3 cup quartered dried figs
1/2 cup chopped walnuts, toasted
1 rip celery, thinly sliced
1/3 cup chopped fresh parsley
2 scallions thinly sliced
3 cups mixed salad greens
6 10 inch multi grain wraps

Directions:Combine yogurt and lemon zest in a medium bowl and season with pepper. Stir in flaked tuna, figs, walnuts, celery, parsley, and scallions. Place 1/2 cup salad greens on each wrap and divide tuna mixture equally on top. Roll and serve.

Monday...already?


So last week, not as successful as I thought I would be. I didn't make dinner every night, because my awesome husband made time for me to go to the gym instead, he knows how much I enjoy it and how I will always give it up in a heart beat to do things for them. So the items that did get done, let's talk about those.
 Monday- Trader Joe's Pizza (Cheese, Salami and Pineapple) W/ Salad
This was delicious as usual. It takes like 30 minutes start to finish and feels like we ordered in. But without the guilt! Mmmm.

Tuesday- Caramel Apple Pork Chops W/ Corn
These were sooo easy, I really almost thought it couldn't be true, so I figure somethings gotta give, I thought it would be the flavor, but nope! This was all around one of the most awesome things I've ever tasted. We NEVER eat pork, simply because I don't know how to cook it. So now, I have a favorite and I'm hooked! This was also an all around crowd pleaser. The only problem, was that my son loved the taste, but didn't like they way the apples looked, once they were cooked. hahah.

Wednesday- Bagel Pizzas W/ Fruit
Yes, this was one of the nights that my husband wanted me to go workout, so I agreed. He was actually really excited about the Bagel Pizza idea and since it was the fasted dinner ever (12 minutes) I didn't feel like I was leaving him to go hungry. Both my husband and son love these soo much, they asked for them again the next night!

Thursday- Bagel Pizzas! Told you they loved them!

Friday- Crock Pot Orange Chicken

So this was the failed recipe of the week. I really had high hopes for this one, and was so proud of myself for getting this ready in the morning at the same time that I was making Home Made Chicken Nuggets for Cody's lunch. The nuggets came out fine, but Cody wasn't a fan, I've normally used the recipe from Weelicious.com for her chicken on a stick, to make my chicken nuggets, so I thought I would change it up. Cody perferred the corn flake covering instead. So the Crock pot was set, and we left for the day...only to come home to a black pot of gross...I followed the recipe exactly, so I have no idea what happened! It was a total loss and I was kinda bummed. Luckily I had a scrapbook night out with a friend and she was making dinner so I won't have to go hungry, as for my son and husband, well my son ate maccoroni and cheese and my husband just threw something together :( I ate stewed tomatoes over chicken with white rice and salad :) Yum!

So this week looks like an attempt to finish out the rest of the list.
Monday- Turkey Nachos!
Tuesday- Apricot Glazed Chicken

Wednesday- Caramel Apple Pork Chops (Still have more pork chops to use up)Thursday- Teryaki Chicken
Friday- Butternut Squash Soup w/ Curried Rice & Vegetables and Half a Turkey Sandwich
I can't find the products online, but I will take pics this week when I can, it's from Trader Joes and it turns out amazing!

Menu Plan Monday? Nope, it's Tuesday!

I'm a little late with my menu, but hey, bare with me, I'm trying to get back into the habit of cooking every night.


 
Monday- Trader Joe's Pizza (Their Dough & Pizza Sauce) Mozzerella & Salami W/ Salad
Tuesday- Caramel Apple Pork Chops W/ Vegetables
Wednesday- Homemade Chicken Nuggets W/ Fries & Vegetables
Thursday-  Crock Pot Orange Chicken & Rice W/ Vegetables
Friday- Teryaki Chicken & Rice W/ Vegetables
Saturday- Apricot Glazed Chicken & Mashed Potatoes W/ Edamame
Sunday- Homemade Bagel Pizzas W/ Salad

 
I also plan on making some extras for Cody's lunch which so far I made the PB&J cookies, and I'm addicted! They are soo delish!





So that's what we've got going on. I'll give review on Friday...hopefully. haha.

Monday Menu Plan (Week 2)

Let's see, So this is how I do MPM, I do it, every other week, because I usually cook all my meals on Monday then freeze for the next 2 weeks. This so far has just been the lunch my husband takes to work and some of my son's lunches here at home. Then I make dinner for 1 or 2 nights fresh, then left overs are lunch. Do you see the pattern? haha I also freeze my husbands breakfast, which is different muffins, then he also eats a yogurt and some fruit with that. I usually make my son's breakfast every morning. Which varies but, I don't always list it. So if that makes sense, that's how we roll here. haha.

Last week, I made almost everything I set out to. The things I didn't make I am going to try this week.

Breakfast/Snacks
Strawberry/Apple Banana/Pineapple Carrot Muffins (Weelicious.com)

Lunches/Dinners

So the Teryaki Chicken and Rice was a total hit. Both my son and husband loved it soo much they want it again this week. Grape, Chicken and Wild Rice Salad, didn't get around to making so I will this week. Turkey Sloppy Joes, I didn't get to make last week so I'm making it this week. Pizza Pinwheels look tasty, but we're going to go a more traditional pizza way with them. Chicken Noodle Soup was sooooo easy and delicious, we're making it again this week, but we put it over mashed potatoes when we eat it. I know, weird, but that's how my husband likes it! haha. Turkey Tacos will be using my mom's recipe for meat. She has those in her head, so I will try to see if I can measure things out. I may try to make my own spagettii sauce, but I don't know if I'll get to it, but I will try!
Pasta and Shimp sounds good, so we'll give it a try :)

I use alot of recipes from Weelicious.com I love her style of cooking and I haven't found any recipe that was too hard. Plus she cooks organically and that's what we're shooting for in this house :)

Menu Plan Monday


Well today I will shoot for my 2nd try at cooking/freezing expedition. The Menu I've selected contains recipies from Weelicious.com! I love that site soooo much!!

Turkey Chili
 BBQ Beef Sandwiches (Maybe)

So all the muffins have proved to be the best take along breakfast ever!! My husband and son are sooo picky it's amazing when I find something that they want more of. I make a batch of muffins, let them cool, then freeze. TADA! They can just grab out a muffin and take it along with them to work or play and in just a little while it's thawed and ready to snack on :)

Turkey Chili was a real hit as well. I've modified the recipe this time and am going to see if it still is a hit. I made a batch of this in my crockpot then cool. Separate into Dad and Cody portions in the right sized plastic tupperware and it will make about 5 servings for each of them :) Yes, I'm very excited about this whole process. Especially since I never in my wildest dreams thought I would be cooking like a good housewife/stay at home mom. I always felt like I lacked in this area, but I'm definately learning and my family loves it.

I'm pretty sure I can get all of these done today :) Let's hope I do :)
